Caprese Sandwich with Burgundy Olives

Makes 1 sandwich
   
1/3 cup   Burgundy Olives ™, coarsely chopped
4 slices   Tomato
2 oz.   Mozzarella, sliced
6   Basil leaves
1 tbsp   Extra virgin olive oil
1/8 tsp   Black pepper
1/4 tsp   Salt
1   4” x 4” piece Focaccia, cut in half
 
To Prepare:
1.   Place tomato slices on bottom slice of bread.
2.   Top with mozzarella and basil leaves.
3.   Top with olives.
4.   Drizzle with olive oil and sprinkle with salt and pepper.
5.   Top with top slice of bread.
6.   Serve.
