B.O.L.T.

(Bacon Olive Lettuce Tomato)  

When you want to have a party-starter that's fun, easy and attention-getting, then you should be thinking of the B.O.L.T.  No, not a metal bolt, but one made with delicious large, California olives.  It's really quite simple and you can make it in less than 30 minutes. They're made with Pearls or Early California Brand Large, Pitted Black Ripe Olives 

 

This recipe makes about 36 pieces.
Prep Time:  20 minutes
Cook Time:  10 minutes

You will need the following ingredients:

1/2 lb. - thick-cut bacon slices
2-6.0 oz. cans - Pearls or Early California Brand Pitted Large Black Ripe Olives
1/2 - head iceberg lettuce
1/2 cup - grape tomatoes (about 36 pieces of those little mini tomatoes)
36 - 4-inch large toothpicks or cocktail skewers

Procedure:

Start with bacon that has been cooked until its almost crispy, well-drained and cut into one inch segments.  It needs to remain slightly soft for skewering.

Cut the lettuce into half-inch squares.

When ready to assemble start by folding a piece of bacon in half and skewer it with the pick.  Follow with a black olive, the lettuce square, another olive and finally the tomato.

Arrange the finished B.O.L.T.s on a serving plate or insert the picks into a block of cheese for a fun party table centerpiece.
