4-6 soft corn tortillas or pitas 1 small tub Tzatziki sauce (commercially prepared) 2 cups drained (1 jar) Pearls Specialties Pitted Kalamata olives, drained 1 1/2 cups garbanzo beans, drained 1 cup red and/or orange bell pepper, diced 1/2 cup crumbled feta cheese 1 cup red cabbage, finely sliced 1/2 cup red onion, finely sliced 1 lemon, cut into wedges
For a meat-lovers version, add slices of grilled lamb or chicken.
Assemble by topping tortilla with tzatziki then layering with all other ingredients and a spritz of lemon juice. Fold and enjoy.
