Cucumber, Tomato, & Olive Salad: 1 cup chopped tomato 2 Persian cucumbers, sliced into ¼-inch rounds 1/2 small red onion, quartered and sliced thin 3/4 cup Pearls Specialties Pitted Kalamata Greek Olives 1 teaspoon olive oil 1/2 teaspoon dried oregano 1/2 teaspoon salt
Herbed Feta 8 ounces feta, drained and cubed into ½-inch cubes 1 teaspoon olive oil 1/2 teaspoon dried oregano
Mezze Platter: Three hummus flavors: Garlic, Olive, and Red Pepper (Recipes here) 1/2 cup tzatziki, in a bowl 1 jar Pearls Specialties Pitted Medley Greek Olives, drained 1 cup roasted red bell peppers from a jar, sliced 6 ounce jar artichoke quarters in oil, drained 6 pieces of pita bread, sliced into sixths 6 Persian cucumbers, quartered lengthwise 6 small carrots, halved lengthwise 8 pre-made dolmas, halved
Toss all the salad ingredients together in a small bowl. Drizzle oil over feta and sprinkle with dried oregano. Arrange the hummus, tzatziki, and salad in bowls on a large serving platter or board. Arrange the rest of the ingredients around the bowls and serve.
