2 cups PEARLS Specialties Pitted Medley, drained 1 tablespoon of lemon zest 1 tablespoon olive oil 1 tablespoon sherry or balsamic vinegar 1 garlic clove, minced or pressed ¼ teaspoon red chili pepper flakes 1 tablespoon minced fresh rosemary 1 tablespoon minced fresh lemon thyme 6 thin lemon slices Freshly ground black pepper
Heat oven to 375◦F Line a large rimmed sheet pan with baking parchment. Toss the all ingredients in a bowl. Spread evenly on the baking sheet and roast for 20 minutes. Serve warm on slices of rustic bread.
