1 cooked roasted curry turkey breast (recipe on website) 1 cup PEARLS Specialties Pitted Kalamata Olives 1 box of fresh, dark baby greens ¼ cup roasted pistachios ½ cup small colorful cherry tomatoes, halved
Dressing 3 tablespoons olive oil 1 tablespoons lemon juice 2 tablespoons seasoned rice vinegar Pinch of Himalayan pink salt Freshly ground black pepper 2 tablespoons of lemon zest
In a small bowl, whisk together the dressing ingredients. Place greens in large shallow bowl or deep platter. Top with tomatoes and pistachios. Thinly slice the turkey breast pieces and place on the greens, tomatoes and nuts. Add the roasted olives to the salad. Drizzle dressing over composed salad. Top with fresh lemon zest.
