Create a brunch board full of Mediterranean flavors and your favorite Pearls Specialties olives for your next family or friends gathering.
Ingredients
½ cup Pearls Specialties Greek Medley olives or add your choice of olives
8oz cream cheese, softened
¼ cup Greek yogurt
1Tablespoon fresh dill, finely chopped
1 teaspoon lemon zest
Salt and pepper to taste
6oz smoked salmon
1 small cucumber, thinly sliced
½ cup cherry tomatoes, chopped
2 Tablespoons capers
¼ cup pistachios, chopped
1 Tablespoon mixed chopped herbs (dill, chives, parsley, etc)
1 ½ teaspoons za’atar seasoning
Olive oil for drizzling
Bagels, pita, crackers for serving
Cooking Instructions
- In a small bowl, combine cream cheese, Greek yogurt, dill, lemon zest, salt and pepper.
- Spread cream cheese mixture evenly on a platter or board.
- Top spread with smoked salmon, cucumbers, tomatoes, olives and capers. Sprinkle with pistachios, herbs and za’atar. Drizzle with olive oil.
- Serve with bagels, pita, crackers or your choice of breads.
