Create a brunch board full of Mediterranean flavors and your favorite Pearls Specialties olives for your next family or friends gathering.

Ingredients

½ cup Pearls Specialties Greek Medley olives or add your choice of olives

8oz cream cheese, softened

¼ cup Greek yogurt

1Tablespoon fresh dill, finely chopped

1 teaspoon lemon zest

Salt and pepper to taste

6oz smoked salmon

1 small cucumber, thinly sliced

½ cup cherry tomatoes, chopped

2 Tablespoons capers

¼ cup pistachios, chopped

1 Tablespoon mixed chopped herbs (dill, chives, parsley, etc)

1 ½ teaspoons za’atar seasoning

Olive oil for drizzling

Bagels, pita, crackers for serving

Cooking Instructions

  1. In a small bowl, combine cream cheese, Greek yogurt, dill, lemon zest, salt and pepper.
  2. Spread cream cheese mixture evenly on a platter or board.
  3. Top spread with smoked salmon, cucumbers, tomatoes, olives and capers. Sprinkle with pistachios, herbs and za’atar. Drizzle with olive oil.
  4. Serve with bagels, pita, crackers or your choice of breads.
