Olive Tapenade Grilled Cheese

Crispy, golden bread meets melty cheese and a savory olive tapenade for a grilled cheese with a gourmet twist. An easy upgrade to a classic sandwich.

Ingredients

1 jar Pearls Ripe Olives, drained & finely chopped

¼ cup finely chopped parsley

2 tablespoons olive oil

1 lemon, juiced

Salt & pepper, to taste

4 slices bread

4 tablespoons butter, softened

1 cup shredded mozzarella

Cooking Instructions

  1. Finely chop the ripe olives and add to a bowl.
  2. To the chopped olives add olive oil, parsley, lemon juice and salt & pepper and mix until combined.
  3. Heat a skillet over low heat.
  4. Butter one side of each slice of bread with 1 tablespoon butter. Place bread, butter-side down, in the skillet and sprinkle each side with cheese, then add olive tapenade to one side.
  5. Cook on low until the bread is golden and toasted and cheese is melted; covering with a lid to help the cheese melt, if needed.
  6. Sandwich the pieces together, slice if desired, and serve warm.
