This refreshing summer salad pairs juicy watermelon with creamy feta, fresh mint, crisp red onion, and Pearls All-Natural Ingredients Ripe Olives for the perfect balance of sweet and savory.

Ingredients

  • 6–8 cups cubed or wedge-cut watermelon
  • 1 (6 oz) can Pearls All-Natural Ingredients Ripe Olives, drained
  • 4–6 oz feta cheese, crumbled or broken into bite-sized pieces
  • ½ cup fresh mint leaves
  • ½ small red onion, very thinly sliced

Optional Dressing

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lime juice
  • Freshly cracked black pepper

Cooking Instructions

  1. Arrange the watermelon on a large serving platter or in a shallow bowl.
  2. Scatter the Pearls ripe olives over the watermelon.
  3. Add the feta, red onion, and fresh mint.
  4. If desired, whisk together the olive oil and lime juice and drizzle over the salad.
