This refreshing summer salad pairs juicy watermelon with creamy feta, fresh mint, crisp red onion, and Pearls All-Natural Ingredients Ripe Olives for the perfect balance of sweet and savory.
Ingredients
- 6–8 cups cubed or wedge-cut watermelon
- 1 (6 oz) can Pearls All-Natural Ingredients Ripe Olives, drained
- 4–6 oz feta cheese, crumbled or broken into bite-sized pieces
- ½ cup fresh mint leaves
- ½ small red onion, very thinly sliced
Optional Dressing
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lime juice
- Freshly cracked black pepper
Cooking Instructions
- Arrange the watermelon on a large serving platter or in a shallow bowl.
- Scatter the Pearls ripe olives over the watermelon.
- Add the feta, red onion, and fresh mint.
