Stuffed chicken, baked inside of a pumpkin! Rather than putting the stuffing inside of your bird, try making these “stuffing meatballs” studded with buttery Pearls black olives. The chicken steams perfectly – staying moist while the stuffing stays juicy with an added burst of savory richness from the olives.

  • 1ea white onion, finely minced
  • 1lbs ground turkey
  • 1/2lbs ground pork
  • 1hd celery, finely minced
  • 1can @pearls_olives ripe black pearls
  • 1tb parsley. chopped
  • 1tb rosemary, chopped
  • 6 cloves garlic, finely minced
  • 4 eggs
  • 2cups sourdough bread, cubed
  • Baked 375F for 2.5 hours
