Mediterranean Grain Bowl with Sun-Dried Tomato Vinaigrette

Pull together a fresh and healthful bowl with pantry and fridge ingredients along with your favorite Pearls Specialties Olives.

This bowl is very easy to substitute with what you have on hand.
Grains: bulgur, Farro, brown rice
Greens: Any greens
Protein: Any beans, chicken, shrimp
Vegetables: Any vegetables

Ingredients

For the Bowl /

4 cups mixed greens

1 cup cooked quinoa

1 can chickpeas, rinsed and drained

½ cup Pearls Specialties Kalamata olives

1 cup cherry tomatoes, chopped

1 small cucumber, diced

4 oz feta cheese, cubed

¼ cup chopped fresh herbs (dill, parsley, cilantro, basil)

 

For the Vinaigrette /

1/3 cup balsamic vinegar

¼ cup oil from the jar of sun-dried tomatoes

2 Tablespoons sun-dried tomatoes

1 Tablespoon Dijon mustard

1 teaspoon honey

2-4 Tablespoons water

Salt and pepper to taste

Cooking Instructions

To make the vinaigrette /

  1. In a small blender combine balsamic vinegar, oil, sun-dried tomatoes, Dijon, and honey. Blend. Add water, 1 Tablespoon at a time until desired consistency is reached. Season with salt and pepper. Set aside.

To make the bowl /

  1. Divide greens, quinoa, chickpeas, olives, tomato, cucumber and cheese between 4 bowls.
  2. Drizzle with sun-dried tomato vinaigrette.
  3. Top with fresh herbs and season with salt and pepper
