Sheet Pan Mediterranean Shrimp

Family (or dinner party) friendly, bursting with Mediterranean flavors and Pearls Specialties Kalamata Olives — all on one sheet pan.
Ingredients
1lb large shrimp, peeled and deveined
3 Tablespoons olive oil, divided
½ teaspoon paprika
¼ teaspoon red pepper flakes
1 red onion, chopped
1 bell pepper, sliced
1 pint cherry tomatoes, whole
1 can artichoke hearts, drained and patted dry
½ cup Pearls Specialties Kalamata Olives
Zest from one lemon
2 teaspoons Italian seasoning
3 cloves minced garlic
Salt and pepper
½ cup chopped parsley
Cooking Instructions
- Preheat oven to 400°F
- In a medium bowl, combine shrimp, 1 Tablespoon olive oil, paprika, chili flakes, 1 teaspoon of salt and ½ teaspoon of pepper. Set aside.
- In a large bowl, combine red onion, bell pepper, cherry tomatoes, artichoke hearts, kalamata olives, lemon zest, Italian seasoning, garlic and one teaspoon salt. Toss until all vegetables are fully coated.
- Spread vegetables into a single, even layer on a large sheet pan. Bake for 12 minutes.
- Remove sheet pan from the oven. Carefully add shrimp. Cook for an additional 10 minutes until shrimp are opaque and cooked through.
- Season with salt and pepper to taste. Serve with brown rice, and top with chopped parsley.
