Sheet Pan Mediterranean Shrimp

Family (or dinner party) friendly, bursting with Mediterranean flavors and Pearls Specialties Kalamata Olives — all on one sheet pan.

Ingredients

1lb large shrimp, peeled and deveined

3 Tablespoons olive oil, divided

½ teaspoon paprika

¼ teaspoon red pepper flakes

1 red onion, chopped

1 bell pepper, sliced

1 pint cherry tomatoes, whole

1 can artichoke hearts, drained and patted dry

½ cup Pearls Specialties Kalamata Olives

Zest from one lemon

2 teaspoons Italian seasoning

3 cloves minced garlic

Salt and pepper

½ cup chopped parsley

Cooking Instructions

  1. Preheat oven to 400°F
  2. In a medium bowl, combine shrimp, 1 Tablespoon olive oil, paprika, chili flakes, 1 teaspoon of salt and ½ teaspoon of pepper. Set aside.
  3. In a large bowl, combine red onion, bell pepper, cherry tomatoes, artichoke hearts, kalamata olives, lemon zest, Italian seasoning, garlic and one teaspoon salt. Toss until all vegetables are fully coated.
  4. Spread vegetables into a single, even layer on a large sheet pan. Bake for 12 minutes.
  5. Remove sheet pan from the oven. Carefully add shrimp. Cook for an additional 10 minutes until shrimp are opaque and cooked through.
  6. Season with salt and pepper to taste. Serve with brown rice, and top with chopped parsley.
