Ingredients
For the crust:
2 cups dried chickpeas soaked overnight and drained. (do not use canned)
1 cup parsley, loosely packed
1 cup cilantro, loosely packed
½ cup fresh dill, loosely packed
½ red onion, cut into chunks
8 garlic cloves, peeled
Juice from one lemon
2-3 Tablespoons of water if necessary
1 Tablespoon cumin
1 Tablespoon coriander
1 teaspoon cayenne
1 teaspoon salt
1 teaspoon baking powder
1 ½ Tablespoons all-purpose flour
For the toppings:
8oz hummus
½ red onion, thinly sliced
1 pint cherry tomatoes, halved.
1 jar Specialties Kalamata Olives, sliced
1 cucumber, sliced
¼ cup feta cheese

Cooking Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- In the bowl of a food processer, pulse together the chickpeas, parsley, cilantro, dill, red onion, garlic and lemon juice until the mixture resembles a coarse meal, but will hold together if you squeeze it in your hand. If the mixture is too dry, add 1 Tablespoon of water at a time until mixture will hold together.
- Transfer mixture to a large bowl and fold in cumin, coriander, cayenne, salt, baking powder and flour.
- Spread mixture onto prepared baking sheet creating an even rectangle or circle about ½ inch thick.
