Chicken Caesar Pasta Salad

This twist on a classic Caesar salad adds hearty tender chicken, rotini pasta, and Pearls Specialties Garlic Stuffed Olives for a wholesome meal.

Ingredients
Salad:
- 8 ounces dry rotini or penne pasta
- 1ó to 2 cups diced chicken breast
- 2 romaine lettuces, chopped into bite-size pieces
- ó cup grated Parmesan cheese
- 1 cup croutons
- 1 cup Pearls Specialties Garlic Stuffed Olives, sliced
Caesar Dressing:
- 3/4 cup mayonnaise
- 1 teaspoon dijon mustard
- 1 clove garlic
- 2 anchovy fillets, packed in oil
- 2 tablespoons lemon juice
- ½ teaspoon pepper
- 1/2 cup grated Parmesan
Cooking Instructions
- Cook the pasta according to package directions.
- Drain the pasta and rinse with cold water to stop the cooking process. Drain well and set aside.
- To make the dressing, add all of the dressing ingredients to a blender or food processor and blend until it’s smooth and creamy.
- Place the cooked pasta, romaine lettuce, chicken, Parmesan, croutons, and olives in a large bowl.
- Add the dressing and toss to combine. Add more dressing according to preference.
- Serve immediately.
