Crispy Baked Tacos

Why go out for fast food tacos when you can throw together this tasty version at home. Keep it mild with ripe olives or spice it up with Pearls Specialties Jalapeno Olives.
Ingredients
- 1lb ground beef
- 3 cloves garlic, minced
- 1 small onion, diced
- ¾ cup Pearls or Early California Ripe Olives, sliced
- 1 teaspoon oregano
- 1 teaspoon za’atar
- 1 teaspoon cumin
- 1 teaspoon salt
- Juice from ½ lemon
- 12- 5inch corn tortillas
- 2 ½ cups shredded mozzarella cheese
For the sauce:
- 1 cup Greek yogurt
- Juice from ½ lemon
- ½ teaspoon salt
- 1 clove garlic, minced
- ½ large jalapeño, roughly chopped
- 1 bunch of parsley, stems removed
- 2 tablespoons fresh dill, roughly chopped
Cooking Instructions
- Preheat oven to 425°F
- To make the sauce, blend all ingredients together until smooth. Set aside.
- Heat 1 Tablespoon oil in a large skillet over medium high heat. Add ground beef and cook until nearly browned, about 5 minutes.
- Add garlic, onions, sliced olives, oregano, za’atar, cumin and salt. Continue cooking another 5 minutes until meat is fully browned and onions are soft. Stir in lemon juice.
- Spray a baking sheet with cooking spray. Lay 6 tortillas flat and top with 1/8 of a cup of shredded mozzarella cheese. Bake for one minute until tortillas are pliable.
- Remove from the oven and scoop a large spoonful of the meat mixture onto each tortilla and fold in half. Spray the tops of the tortillas with cooking spray. Repeat with all tortillas.
- Bake for 15 minutes, flipping halfway through, until tortillas are crispy. Serve immediately drizzled with sauce.
Air Fryer Method: Preheat Air fryer to 425°F Bake 8 minutes, flipping halfway through, until crispy.
