Bacon Wrapped Pearls Blue Cheese Stuffed Olives

This is a party appetizer that guests will remember! The balsamic glaze adds just a touch of sweetness. Bacon Wrapped Pearls Olives — destined to be a new classic.

Ingredients

  • 1 jar Pearls Specialties Blue Cheese Stuffed Queen Olives (or Garlic Stuffed), 24-26 olives
  • 13 slices thinly sliced, center-cut style bacon (a 12 ounce package has 13 slices)
    wooden toothpicks, 24-26
  • 3 tablespoons fruit infused or plain balsamic vinegar
  • 2 tablespoons brown sugar

Cooking Instructions

  1. Prep
    Preheat oven to 400°F
    Line two large rimmed baking sheets with parchment.
    Drain the jar of olives and pat them dry with a paper towel. Set them aside in a bowl.
    Working on a large cutting board, cut the bacon strips in half lengths.
    Have toothpicks handy.
  2. Assembly
    On the cutting board, place one olive at the end of a half strip of bacon, and gently roll the olive up in to the bacon, then secure tightly with a toothpick by piercing it all the way through. Leave with an equal length of toothpick sticking out each end. Place the bacon wrapped olive onto the baking sheet.
    Repeat until the entire jar is done, placing 12 wrapped olives on each baking sheet.
  3. Glaze
    In a small bowl whisk together 3 tablespoons of balsamic vinegar with 2 tablespoons brown sugar.
    Using a small pastry brush, brush each one of the olives with the glaze. Do this while the olives are on the baking sheet to minimize mess.
  4. Bake
    Bake each tray for 10 minutes. After ten minutes, turn the olives over. Wear an oven mitt and turn each one by the toothpick. Bake an additional 5 minutes until the bacon is well done but not burned. Keep an eye on them and add more time if needed, but only a few minutes at a time.
    When they are done drain them on paper towels and server them as soon as they are cool enough. The toothpicks are perfect for picking up the olives.
