A delicious, light, vegetarian, Mediterranean meal.
- 4-6 soft corn tortillas or pitas
- 1 small tub Tzatziki sauce (commercially prepared)
- 2 cups drained (1 jar) Pearls Specialties Pitted Kalamata olives, drained
- 1 1/2 cups garbanzo beans, drained
- 1 cup red and/or orange bell pepper, diced
- 1/2 cup crumbled feta cheese
- 1 cup red cabbage, finely sliced
- 1/2 cup red onion, finely sliced
- 1 lemon, cut into wedges
For a meat-lovers version, add slices of grilled lamb or chicken.
- Assemble by topping tortilla with tzatziki then layering with all other ingredients and a spritz of lemon juice. Fold and enjoy.
