Lemon & Herb Roasted Olives with Burrata

This one-pan crowd-pleaser is the perfect starter for Summer celebrations. Pearls Olive Medley is combined with bright lemon and herbaceous notes and roasted to enrich the luscious olive flavor (warm olives are the best!).  Nestle the burrata on top, finish with honey, pepper and basil and you have the ultimate olive appetizer.

Ingredients

  • 2 jars Pearls Specialties Pitted Olive Medley
  • 1/3 cup extra virgin olive oil
  • 6 cloves garlic, peeled
  • 1 shallot, quartered
  • 1 lemon, sliced
  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • Chili flakes
  • 2 balls burrata cheese
  • Honey
  • Freshly ground black pepper
  • Fresh basil leaves
  • Bread, for dipping

Cooking Instructions

  1. Preheat the oven to 450 F.
  2. In a baking dish, combine the olives, olive oil, garlic, shallot, lemon slices, thyme, oregano, and a pinch of chili flakes.
  3. Roast for 30 minutes.
  4. To serve, remove the thyme and oregano sprigs.
  5. Split the burrata over the olive mixture and nestle it in.
  6. Let the dish sit for 5 minutes to warm the cheese and to allow the olives to cool slightly.
  7. Finish with a generous drizzle of honey, a generous grind of black pepper and fresh basil leaves.
  8. Spoon the perfect bite onto the bread and dig in.
