These bite-sized potato salad skewers deliver all the flavors of classic potato salad in an easy, appetizer-friendly bite. Crispy air-fried potatoes, crunchy vegetables, and Pearls All-Natural Ingredients Ripe Olives are finished with a creamy dill drizzle.
Ingredients
- 1 can Pearls All-Natural Ingredients Ripe Olives, drained
- 12 baby potatoes
- 2 celery stalks, cut into 1-inch pieces
- 1 small red onion, cut into large chunks or wedges
- Fresh dill sprigs
- ½ teaspoon dill herb seasoning
- ⅓ cup Kensington mayo-style sauce
- 1–2 tablespoons milk or water (optional, to thin for drizzling)
- Chopped fresh chives, for garnish
- Salt and black pepper
- Olive oil
Cooking Instructions
- Preheat the air fryer to 400°F.
- Toss the baby potatoes with a drizzle of olive oil, salt, and pepper. Air fry for 18–22 minutes, shaking halfway through, until golden brown and fork-tender. Let cool just enough to handle.
- In a small bowl, whisk together the mayo-style sauce and dill herb seasoning. Thin with a splash of milk or water if needed until it’s easy to drizzle.
- Assemble the skewers by threading a baby potato, celery, red onion, a sprig of fresh dill, and a Pearls All-Natural Ingredients Ripe Olives, repeating ingredients as desired depending on skewer size.
- Arrange on a serving platter.
