Savory Olive & Cheese Biscotti

Who says Biscotti needs to be sweet? This savory version with cheese, herbs, and Pearls Specialties Olives is ideal for entertaining or as a savory snack.

Ingredients

3 cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

2 Tablespoons mixed chopped herbs (dill, parsley, chives, etc)

1 ½ cups mixed Pearls Specialties Castelvetrano and Pearls Specialties Real Pimento Strips olives, thinly sliced

1 cup finely grated parmesan cheese

2 eggs

½ cup milk

Cooking Instructions

  1. Preheat oven to 350°F
  2. In a large bowl combine all-purpose flour, baking powder, salt, mixed herbs, olives and parmesan cheese.
  3. Make a well in the center of the dry mixture and add eggs and milk. Fold ingredients together to form a shaggy dough.
  4. Turn dough onto a lightly floured surface and knead for 1-2 minutes fully combined. Form dough into a 12  x 4 inch loaf.
  5. Bake on a parchment lined baking sheet for 35 minutes. Remove from the oven and cool for 10 minutes until cool enough to handle.
  6. Slice baked loaf into ¼ inch slices. Place slices in an even layer on a parchment lined baking sheet. Bake for an additional 30 minutes, flipping slices halfway through until crisp.
