Ingredients
Tomato Hummus Toast
- 1 slice of bread, toasted
- 2 tablespoons Hummus
- 3 slices tomato
- A few basil leaves
- 1 tablespoon crumbled feta
- 1 tablespoon Pearls or Early California Black Ripe Olives
- Balsamic vinegar, for drizzling
Cucumber Mint Hummus Toast
- 1 slice of bread, toasted
- 2 tablespoons Hummus
- 8 slices cucumber
- A few mint leaves
- 1 tablespoon crumbled goat cheese
- 1 tablespoon Pearls or Early California Black Ripe Olives
- Pepper
Roasted Red Pepper Hummus Toast
- 1 slice of bread, toasted
- 2 tablespoons Hummus
- ¼ cup chopped roasted red pepper
- 1 teaspoon chopped roasted garlic
- 1 tablespoon packed parsley
- Juice of half a lemon (1.5 teaspoons)
- 2 tablespoons Pearls or Early California Black Ripe Olives, chopped, plus more for topping
Cooking Instructions
Tomato Hummus Toast:
- Spread the hummus over the toast, then top with tomatoes, basil, feta, olives, and balsamic.
Cucumber Mint Hummus Toast:
- Spread the hummus over the toast, then top with cucumber, mint, goat cheese, olives, and pepper.
Roasted Red Pepper Hummus Toast:
- In a small bowl, stir together the roasted red pepper, garlic, parsley, and lemon. Spread the hummus over the toast, then top with the roasted red pepper mixture and a few black olives.
