Ingredients

Tomato Hummus Toast

1 slice of bread, toasted
2 tablespoons Hummus
3 slices tomato
A few basil leaves
1 tablespoon crumbled feta
1 tablespoon Pearls or Early California Black Ripe Olives
Balsamic vinegar, for drizzling

Cucumber Mint Hummus Toast

1 slice of bread, toasted
2 tablespoons Hummus
8 slices cucumber
A few mint leaves
1 tablespoon crumbled goat cheese
1 tablespoon Pearls or Early California Black Ripe Olives
Pepper

Roasted Red Pepper Hummus Toast
1 slice of bread, toasted
2 tablespoons Hummus
¼ cup chopped roasted red pepper
1 teaspoon chopped roasted garlic
1 tablespoon packed parsley
Juice of half a lemon (1.5 teaspoons)
2 tablespoons Pearls or Early California Black Ripe Olives, chopped, plus more for topping

Cooking Instructions

Tomato Hummus Toast:
Spread the hummus over the toast, then top with tomatoes, basil, feta, olives, and balsamic.

Cucumber Mint Hummus Toast:
Spread the hummus over the toast, then top with cucumber, mint, goat cheese, olives, and pepper.

Roasted Red Pepper Hummus Toast:
In a small bowl, stir together the roasted red pepper, garlic, parsley, and lemon. Spread the hummus over the toast, then top with the roasted red pepper mixture and a few black olives.
