Ingredients

Tomato Hummus Toast

  • 1 slice of bread, toasted
  • 2 tablespoons Hummus
  • 3 slices tomato
  • A few basil leaves
  • 1 tablespoon crumbled feta
  • 1 tablespoon Pearls or Early California Black Ripe Olives
  • Balsamic vinegar, for drizzling

Cucumber Mint Hummus Toast

  • 1 slice of bread, toasted
  • 2 tablespoons Hummus
  • 8 slices cucumber
  • A few mint leaves
  • 1 tablespoon crumbled goat cheese
  • 1 tablespoon Pearls or Early California Black Ripe Olives
  • Pepper

Roasted Red Pepper Hummus Toast

  • 1 slice of bread, toasted
  • 2 tablespoons Hummus
  • ¼ cup chopped roasted red pepper
  • 1 teaspoon chopped roasted garlic
  • 1 tablespoon packed parsley
  • Juice of half a lemon (1.5 teaspoons)
  • 2 tablespoons Pearls or Early California Black Ripe Olives, chopped, plus more for topping

Cooking Instructions

Tomato Hummus Toast:

  1. Spread the hummus over the toast, then top with tomatoes, basil, feta, olives, and balsamic.

Cucumber Mint Hummus Toast:

  1. Spread the hummus over the toast, then top with cucumber, mint, goat cheese, olives, and pepper.

Roasted Red Pepper Hummus Toast:

  1. In a small bowl, stir together the roasted red pepper, garlic, parsley, and lemon. Spread the hummus over the toast, then top with the roasted red pepper mixture and a few black olives.
