Turkey with Veggies One-Pan

This simple turkey dish is full of amazing flavors and ready in just 15 minutes.
Ingredients
Spice rub:
- 2 teaspoons curry powder
- 1 teaspoon Harissa powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 clove pressed garlic
- 2 tablespoons olive oil
- ¼ cup sesame seeds
- 1 turkey half breast, deboned, cut in three pieces of similar thickness
- 2 small sweet potatoes, peeled and cut into similar size wedges
- 1 small red onion, sliced
- 1 red or yellow bell pepper, cut into strips
- 1 tablespoon olive oil
- 1 cup Pearls Specialties Garlic Stuffed Olives, drained
- 1 tablespoon olive oil
Cooking Instructions
- Heat oven to 400°F
- Line large rimmed sheet pan with baking parchment.
- Lay turkey pieces on parchment to one side of pan. Mix together curry spice rub in a small bowl. With a pastry brush, coat the turkey pieces with the spice mixture. Place the sliced veggies on the other end of the pan, evenly spread, and spread the olives around pan. Drizzle veggies with 1 tablespoon olive oil.
- Roast all ingredients for 15 minutes. Check turkey and turn veggies. Return to oven for another five minutes if necessary. Remove from oven and rest briefly. Slice the turkey breast pieces as desired.
