Zesty Lemon Tuna Pasta with Olives

Get dinner on the table in 30 minutes with this Mediterranean inspired Tuna Pasta using pantry jarred or canned tuna and Pearls Simply Olives.

Ingredients

  • 2 Tbsp chili flakes
  • ½ cup neutral oil like canola or avocado
  • 1 shallot, diced
  • 3 cloves of garlic, minced
  • 1-6oz can Pearls Simply Green Pitted Olives, drained, roughly chopped
  • 12 oz linguine
  • Zest from one lemon
  • 2 Tbsp fresh dill, finely chopped
  • 2-6.7 oz jars* of tuna packed in olive oil, drained
  • 1 large handful of arugula (about ¾ cup)
  • 2 Tbsp finely grated parmesan plus additional for garnish
  • Salt and pepper

Cooking Instructions

1. In a small bowl combine chili flakes and oil. Set aside while you chop your shallots, garlic, olives and dill, and zest your lemon.
2. Bring a large pot of salted water to a boil. Add linguine and cook for 11-13 minutes until al dente. Reserve 1/4 cup pasta water before draining.
3. Heat a large skillet over medium high heat. Add 2 Tbsp of the chili oil mixture reserving the rest for another use.
4. Add shallot and garlic. Cook for one minute until fragrant. Add olives. Cook for 3-4 minutes, stirring occasionally.
5. Add tuna, lemon zest and fresh dill. Add pasta water and stir, breaking up the tuna. Cook for 4-5 minutes. Season with salt and pepper.
6. Add cooked pasta to skillet, tossing to coat. Add arugula and parmesan cheese. Cook for one additional minute and serve.
7. Garnish with extra parmesan.

*Note: You can substitute 3-5oz cans of tuna packed in oil or 4-3oz packets of tuna packed in oil.
