
Chef Joe’s Juicy Lucy Burger Sauce

He says, “Rather than recreate my Tournament of Champions recipe, I thought it would be fun to elevate the unexpected. This time with my favorite Pearls Specialties olives replacing the usual suspect of pickles in the “secret sauce” The buttery Castelvetranos give a subtle sweetness, and the stuffed Jalapenos bring the heat.”

Ingredients
• 1/4 cup mayonnaise
• 1 tbsp yellow mustard
• 1 tbsp Dijon mustard
• 1 1/2 tbsp ketchup
• 1 tbsp Pearls Specialties Castelvetrano olives, finely chopped
• 1 tbsp Pearls Specialties Jalapeño Stuffed olives, finely chopped
• 2 tbsp Worcestershire caramelized onions (see below)
• 1/2 tsp garlic powder
• 1/2 tsp smoked paprika (optional, for depth)
• Salt and pepper, to taste
Worcestershire Caramelized Onions (for sauce and topping):
• 1 medium yellow onion, thinly sliced
• 1 tbsp butter
• 2 tsp olive oil
• 2 tsp Worcestershire sauce
Cooking Instructions
1. In a skillet over medium-low heat, add butter and olive oil.
2. Add the onions and cook slowly, stirring occasionally, for 15-20 minutes until deep golden.
3. In the last 5 minutes, stir in Worcestershire sauce and cook until syrupy and rich.
Instructions for the Sauce:
1. In a mixing bowl, combine the mayonnaise, yellow mustard, Dijon mustard, and ketchup.
2. Stir in the chopped Castelvetrano and jalapeño-stuffed olives.
3. Add 2 tablespoons of the prepared caramelized onions.
4. Season with garlic powder, smoked paprika (if using), salt, and pepper.
5. Mix well until fully combined.
6. Let sit for at least 30 minutes in the fridge to meld flavors.
