Mediterranean Baked Salmon

This crowd-pleasing baked salmon has fresh Mediterranean flavors of lemon, dill, tomatoes, olives, cucumber, onion, and feta. While the salmon bakes, the salad mix topping gets tossed together in a pinch. When the salmon is out of the oven, top it with the fresh mix and serve immediately.

Ingredients

Salmon:

  • 4 salmon fillets (4-5 oz each)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice

 

The Mediterranean Salad Mix:

  • 1 cup halved cherry tomatoes
  • 1 cup sliced English cucumber
  • ½ red onion, thinly sliced
  • ½ cup Pearls Specialties Kalamata olives, pitted
  • ½ cup Pearls Green Ripe olives, pitted
  • 1 tablespoon capers
  • 2 sprigs fresh dill, chopped
  • ⅓ cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • Kosher salt and freshly ground black pepper, to taste

Cooking Instructions

  1. Preheat oven to 400F.
  2. Place salmon fillets onto a parchment lined baking sheet. In a small bowl, combine basil, oregano, onion powder, garlic powder, salt, and pepper. Set aside.
  3. Drizzle the salmon with 2 tablespoons of olive oil and season with spices.
  4. Place into the oven and bake for 10-12 minutes, until salmon flakes with a fork.
  5. In a large bowl, combine cherry tomatoes, cucumber, red onion, Kalamata olives, green olives, capers, dill, feta, and 2 tablespoons of olive oil. Season with salt and pepper, to taste. Toss well and set aside.
  6. Drizzle lemon juice over salmon. Spoon the Mediterranean salad mix over the salmon and serve.
