Mediterranean Baked Salmon

This crowd-pleasing baked salmon has fresh Mediterranean flavors of lemon, dill, tomatoes, olives, cucumber, onion, and feta. While the salmon bakes, the salad mix topping gets tossed together in a pinch. When the salmon is out of the oven, top it with the fresh mix and serve immediately.

Ingredients
Salmon:
- 4 salmon fillets (4-5 oz each)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
The Mediterranean Salad Mix:
- 1 cup halved cherry tomatoes
- 1 cup sliced English cucumber
- ½ red onion, thinly sliced
- ½ cup Pearls Specialties Kalamata olives, pitted
- ½ cup Pearls Green Ripe olives, pitted
- 1 tablespoon capers
- 2 sprigs fresh dill, chopped
- ⅓ cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
- Kosher salt and freshly ground black pepper, to taste
Cooking Instructions
- Preheat oven to 400F.
- Place salmon fillets onto a parchment lined baking sheet. In a small bowl, combine basil, oregano, onion powder, garlic powder, salt, and pepper. Set aside.
- Drizzle the salmon with 2 tablespoons of olive oil and season with spices.
- Place into the oven and bake for 10-12 minutes, until salmon flakes with a fork.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, Kalamata olives, green olives, capers, dill, feta, and 2 tablespoons of olive oil. Season with salt and pepper, to taste. Toss well and set aside.
- Drizzle lemon juice over salmon. Spoon the Mediterranean salad mix over the salmon and serve.
