Vegan Skillet Green Pizza

Briny black olives make the flavors pop in this vibrant pizza that tastes like spring on a plate! An easy vegan main dish that really satisfies.

Ingredients

  • 10 ounces pre-made pizza dough (enough for a 10-inch crust)
  • 3 teaspoons extra-virgin olive oil, divided use
  • ¼ cup store-bought vegan pesto
  • 1 medium zucchini, shaved into ribbons
  • 3 medium asparagus spears, shaved into ribbons
  • Salt and pepper
  • ¼ cup Pearls Large Ripe Black Olives, sliced
  • ¼ cup fresh or frozen green peas
  • Handful mint or basil leaves
  • Optional: 1/3 cup vegan ricotta

Cooking Instructions

  1. Position a rack in the bottom third of the oven and preheat to 500ºF. Rub the bottoms and sides of a 10-inch cast-iron skillet with 1 teaspoon of the olive oil.
  2. In a large bowl, toss together the zucchini and asparagus ribbons with the remaining 2 teaspoons of olive oil, 1/8 teaspoon salt, and a few turns of pepper.
  3. Stretch the pizza dough into a 10-inch round and place in the pan, leaving the edges a bit thicker to form a crust.
  4. Spread the pesto over the dough and top with the zucchini and asparagus ribbons, olives, and peas.
  5. Place the pizza in the oven and bake until the crust is golden and the veggies are tender, 8-12 minutes.
  6. Remove from the oven and top with the mint and ricotta, if using.
  7. Use a metal spatula to remove the pizza to a board and cut it into wedges. Serve warm.
