Mediterranean Chicken Smashburger Tacos

Please everyone with this Mediterranean mix-up of smashburgers and tacos, featuring Pearls Specialties Olives. Its sure to be a family favorite you come back to time and time again.
Ingredients
For the meat:
- 1lb ground chicken
- 1 Tablespoon lemon zest
- 1 teaspoon za’atar
- ½ teaspoon dried dill
- 1 clove of garlic, minced
- 2 Tablespoons red onion, minced
- 1 Tablespoon fresh parsley, finely chopped
- 1 teaspoon salt
- 4 fresh pitas
For the sauce:
- ½ cup Greek yogurt
- Juice from ½ lemon
- ¼ teaspoon cumin
- ½ teaspoon salt
For the toppings:
- 1 cup Pearls Specialties garlic and jalapeño stuffed olives, sliced
- 1 tomato, sliced
- 1 small cucumber, sliced
- ½ red onion, thinly sliced
- Romaine lettuce, shredded
- ¼ cup fresh parsley, chopped
- ¼ cup fresh dill, chopped
- ½ cup feta cheese
Cooking Instructions
- Preheat flat top grill to high heat, or use a flat griddle pan on a stovetop.
- In a bowl, combine all meat ingredients -chicken through salt. Do not overmix. Form meat mixture into 4 equal balls and refrigerate while grill heats up.
- To make the sauce, whisk together all ingredients. Add additional salt to taste.
- Place a ball of meat onto the screaming hot grill surface. Top with a pita and press down firmly using a metal spatula or a burger press to create an even flat surface with the meat. Repeat with remaining meat and pitas. Allow meat to cook for two minutes untouched.
- Using a metal spatula, carefully flip each pita. It may stick a little, but that’s what gives you those really crispy edges. Continue cooking for 2-3 more minutes to warm the pita through and continue cooking the meat.
- Top each Smashburger taco with desired toppings and a drizzle of sauce. Fold and enjoy.
