Ingredients
- 1 jar of Pearls Specialties Castelvetrano Olives
- 55 cloves garlic, peeled
- 1.5 cups olive oil
- 2 tablespoons sesame seeds
- 1 tablespoon coriander seed
- 1 tablespoon fennel seed
- 2 teaspoons chile flake
- 1 lemon zest peeled
- Kosher salt
- 1 bricks cream cheese, softened
Cooking Instructions
- Set a wide pan over low heat and add the olive oil, the olives and all the garlic and crushed spices.
- Let the cloves slowly toast until they turn golden and soft. Stir now and then so they color evenly.
- Season with a good pinch of salt and lightly crush the garlic with a spoon so it turns jammy but still holds little pieces.
- Spread the cream cheese on a platter or in a shallow bowl.
- Spoon the warm garlic and spiced oil over the top so it pools around the edges.
- Serve with warm bread, crackers, or crisp vegetables.
