Olive Tapenade Grilled Cheese

Crispy, golden bread meets melty cheese and a savory olive tapenade for a grilled cheese with a gourmet twist. An easy upgrade to a classic sandwich.
Ingredients
1 jar Pearls Ripe Olives, drained & finely chopped
¼ cup finely chopped parsley
2 tablespoons olive oil
1 lemon, juiced
Salt & pepper, to taste
4 slices bread
4 tablespoons butter, softened
1 cup shredded mozzarella
Cooking Instructions
- Finely chop the ripe olives and add to a bowl.
- To the chopped olives add olive oil, parsley, lemon juice and salt & pepper and mix until combined.
- Heat a skillet over low heat.
- Butter one side of each slice of bread with 1 tablespoon butter. Place bread, butter-side down, in the skillet and sprinkle each side with cheese, then add olive tapenade to one side.
- Cook on low until the bread is golden and toasted and cheese is melted; covering with a lid to help the cheese melt, if needed.
- Sandwich the pieces together, slice if desired, and serve warm.
