One-Skillet Lemon Parmesan White Beans & Castelvetrano Olives

This skillet of white beans with Pearls Specialties Castelvetrano Olives and spices is an easy one-pan dinner bursting with Mediterranean-inspired flavor.

Ingredients

1 tablespoon oil

1 shallot, thinly sliced

2 garlic cloves, thinly sliced

3 cups cannellini beans

1 lemon, zested & juiced

1 cup vegetable broth

½ teaspoon salt

½ teaspoon pepper

½ teaspoon red pepper flakes

1 jar Pearl Specialties Castelvetrano Olives

½ cup fresh grated Parmesan

Fresh chopped parsley, for garnish

Toasted bread slices, for serving

Cooking Instructions

  1. Heat a skillet to medium heat. Drizzle with oil, add shallots and garlic cooking until softened.
  2. Add beans, lemon zest, juice, salt, pepper and broth.
  3. Set half of the olives aside and slice the other half, then add to the beans and bring to a simmer cooking for roughly 10 minutes until broth thickens, stirring often.
  4. Add parmesan cheese to the beans and cook for an additional 5 minutes until thickened.
  5. Garnish with fresh chopped parsley.
  6. Serve toasted bread alongside beans.
