One-Skillet Lemon Parmesan White Beans & Castelvetrano Olives

This skillet of white beans with Pearls Specialties Castelvetrano Olives and spices is an easy one-pan dinner bursting with Mediterranean-inspired flavor.
Ingredients
1 tablespoon oil
1 shallot, thinly sliced
2 garlic cloves, thinly sliced
3 cups cannellini beans
1 lemon, zested & juiced
1 cup vegetable broth
½ teaspoon salt
½ teaspoon pepper
½ teaspoon red pepper flakes
1 jar Pearl Specialties Castelvetrano Olives
½ cup fresh grated Parmesan
Fresh chopped parsley, for garnish
Toasted bread slices, for serving
Cooking Instructions
- Heat a skillet to medium heat. Drizzle with oil, add shallots and garlic cooking until softened.
- Add beans, lemon zest, juice, salt, pepper and broth.
- Set half of the olives aside and slice the other half, then add to the beans and bring to a simmer cooking for roughly 10 minutes until broth thickens, stirring often.
- Add parmesan cheese to the beans and cook for an additional 5 minutes until thickened.
- Garnish with fresh chopped parsley.
- Serve toasted bread alongside beans.
