Sheet Pan Harissa Gnocchi

Full of Moroccan flavors, this one (sheet) pan with Pearls Specialties Kalamata Olives is a quick dinner the whole family or gathering of friends will enjoy.

Ingredients

  • ½ cup olive oil
  • 1 Tbsp Harissa seasoning
  • 2 cloves garlic, minced
  • 1 tsp salt
  • Juice from one lemon
  • ½ teaspoon fresh thyme
  • ½ tsp chili flakes (optional)
  • 5 oz package fresh potato gnocchi
  • 15oz can black lentils, drained and rinsed
  • 1 pint cherry tomatoes, halved
  • 1 small eggplant, diced
  • ½ large bell pepper, sliced
  • 6oz jar Pearls Specialties Kalamata Olives, drained
  • 1 small red onion, sliced
  • ½ cup feta cheese
  • 1 cup chopped mixed fresh herbs such as parsley, dill, mint or basil

Cooking Instructions

  1. Preheat oven to 400° F
  2. In a small bowl, whisk together olive oil, harissa seasoning, garlic, salt, lemon juice, fresh thyme and chili flakes (if using). Set aside.
  3. Add gnocchi, lentils, tomatoes, eggplant, bell pepper, olives, and red onion to a sheet pan. Drizzle with olive oil mixture and toss to combine. Make sure everything is evenly coated and then spread into a single layer.
  4. Bake for 30 minutes, stirring halfway through.
  5. Top with feta and herbs. Serve immediately.
