Sheet Pan Harissa Gnocchi

Full of Moroccan flavors, this one (sheet) pan with Pearls Specialties Kalamata Olives is a quick dinner the whole family or gathering of friends will enjoy.

Ingredients
- ½ cup olive oil
- 1 Tbsp Harissa seasoning
- 2 cloves garlic, minced
- 1 tsp salt
- Juice from one lemon
- ½ teaspoon fresh thyme
- ½ tsp chili flakes (optional)
- 5 oz package fresh potato gnocchi
- 15oz can black lentils, drained and rinsed
- 1 pint cherry tomatoes, halved
- 1 small eggplant, diced
- ½ large bell pepper, sliced
- 6oz jar Pearls Specialties Kalamata Olives, drained
- 1 small red onion, sliced
- ½ cup feta cheese
- 1 cup chopped mixed fresh herbs such as parsley, dill, mint or basil
Cooking Instructions
- Preheat oven to 400° F
- In a small bowl, whisk together olive oil, harissa seasoning, garlic, salt, lemon juice, fresh thyme and chili flakes (if using). Set aside.
- Add gnocchi, lentils, tomatoes, eggplant, bell pepper, olives, and red onion to a sheet pan. Drizzle with olive oil mixture and toss to combine. Make sure everything is evenly coated and then spread into a single layer.
- Bake for 30 minutes, stirring halfway through.
- Top with feta and herbs. Serve immediately.
