Spicy Tuna Olive Crunch Lettuce Wraps

Our Pearls or Early California Sliced Ripe Olives star in these easy to assemble, colorful tuna lettuce wraps.

Ingredients

Two 10-ounce cans albacore tuna in water, drained

½ small shallot, minced

2 tablespoons carrot, diced

2 tablespoons English cucumber, diced

¼ cup Pearls or Early California Sliced Ripe Olives

¼ cup prepared Siracha mayonnaise

1 small lime, juiced

Salt and pepper to taste

Baby Gem or bibb lettuce, leaves separated

Small, ripe avocado chopped into ½ cubes, pickled onions and lime wedges for garnish

Cooking Instructions

  1. Mix tuna, shallot, carrot, cucumber, olives, Siracha mayonnaise and lime juice until just combined in a medium mixing bowl. Season with salt and pepper to taste.
  2. Spoon tuna mixture onto individual lettuce leaves.
  3. Garnish with avocado, pickled onions and lime wedges if desired.
