Tzatziki Tortellini Pasta Salad

The Mediterranean flavors are perfect for the summertime and this salad is packed with cucumbers, artichokes, red onions, feta, herbs, and Pearls Specialties Kalamata Olives! This is a great recipe for a side dish or it can be the main star of the dinner.

Ingredients
- 1 lb sausage stuffed tortellini
- 1 cup cucumbers, diced
- 1 can artichokes, quartered
- 1/2 red onion, diced
- 3/4 cup Pearls Specialties Kalamata Olives, halved
- 1/2 cup feta cheese
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- 1 cup tzatziki
- 2 tbsp red wine vinegar
- 1/2 lemon, juiced
- 1 tsp salt
- 1/2 tsp black pepper
Cooking Instructions
- Cook the tortellini according to package directions. Let cool before assembling.
- In a large mixing bowl, add the cooled tortellini, Pearls Specialties Kalamata olives, cucumbers, artichokes, red onions, feta, dill and parsley.
- Toss the pasta with the lemon, red wine vinegar, tzatziki, salt and pepper until everything is combined. Serve immediately or store in an air-tight container for up to 3 days.
